These Sausage & Cheddar Buttermilk Waffles are everything you love about a classic diner breakfast wrapped into one crispy, fluffy waffle. Savory breakfast sausage, sharp cheddar cheese, and tender homemade buttermilk waffles come together for an easy breakfast that feels special enough for weekends but simple enough for busy mornings.

Serve them with butter, warm maple syrup, and a fried or scrambled egg for the ultimate sweet-and-savory combination. We especially love turning them into a McGriddle-style breakfast sandwich by folding one waffle in half or stacking another on top with eggs in the middle.
They freeze beautifully, making them a perfect make-ahead option for meal prep too.

Sausage & Cheddar Buttermilk Waffles
Yield: 8 waffles
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients:
For the Waffles
2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Mix-Ins
1 pound ground breakfast sausage
4–6 ounces sharp cheddar cheese, freshly shredded
2–4 tablespoons milk, as needed for consistency
Directions:
Cook the breakfast sausage in a skillet over medium heat, breaking it into crumbles until browned and fully cooked. Drain any excess grease and let cool slightly.
Preheat your waffle iron according to the manufacturer’s instructions.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Fold in the cooked sausage and shredded cheddar cheese. If the batter feels too thick, add 2–4 tablespoons of milk until it reaches a thick but scoopable consistency.
Grease the waffle iron if needed and cook the waffles according to your waffle maker’s instructions until golden brown and crisp.
Serve warm with butter, maple syrup, and a fried or scrambled egg.
Tips for the Best Waffles
Freshly shred your cheese for better melting and texture.
Let the cooked sausage cool slightly before adding it to the batter so it doesn’t affect the waffle texture.
Freeze leftover waffles in a single layer, then store in a freezer bag. Reheat in the toaster or oven for an easy breakfast.
